Gluten is a protein, which is found in bread, pasta, cookies, pizza crust and many other foods containing wheat, barley or rye. If a coeliac eats this protein, it causes an immune reaction in the intestines causing damage to the lining of the intestines. It also diminishes their ability to absorb nutrients.
